Christmas Cinnamon Cookies

It's time to start thinking of Christmas and what better way to get a taste for the season than with these delicious Scandinavian home-made biscuits? Not only will they go down a treat with all the family, they'll leave your home smelling good enough to eat!



375g plain flour

1tsp baking powder

1tsp finely grated lemon rind

125g soft brown sugar

250g salted butter cut into pieces

1 large egg, beaten


2 tsp cinnamon

50g Demerara sugar

1 egg, beaten


• Sift the flour into a bowl and add the lemon and sugar

• Rub in the butter until it forms coarse crumbs

• Add the egg and knead for two minutes on a floured surface

• Wrap the dough in cling film and chill for at least an hour (preferably overnight)

• Sprinkle the dough with flour and roll out thinly between sheets of baking parchment

• Removing the parchment, cut out the biscuits (5 to 6cm diameter)

• Brush each one with egg and sprinkle with the cinnamon mix

• Preheat the oven to 200 degrees/gas mark 6 and bake for around 10 minutes until golden
