Flourless Scandinavian Chocolate Cake

OK so, let's face it, the vast majority of us are now in the midst of our panic Christmas diet, giving ourselves just a matter of weeks to squeeze into that little black dress we long to wear at the Christmas party. But fair's fair, we all deserve a treat now and again don't we? So, why not have your cake and eat it with this temptingly tasty flourless chocolate cake from Scandinavia?


12oz chocolate

1/3 cup butter

1/3 cup milk

1/3 cup ground almonds

7/8 cup sugar

1 tablespoon baking powder

4 eggs, separated


1 Preheat the oven to 350 degrees and grease a nine inch cake tin

2 Melt the chocolate with the butter and milk

3 Beat the egg yolks with half of the sugar

4 Fold in the melted butter and chocolate mixture

5 Fold in the ground almonds and baking powder

6 Beat egg whites until frothy and gradually add the remaining sugar, beating until stiff peaks form

7 Fold the beaten egg whites into the rest of the mixture

9 Put the mixture in the tin and bake at 350 degrees for around 40 minutes

10 Enjoy!
