As the days get colder and the nights draw in, thoughts turn to winter warmers. Rustic stews and tasty soups are the order of the day – so how’s this for a soup with a difference?
1.25 litres of water
A quarter of a cup of parboiled rice
A third of a cup of raisins
1 cinnamon stick
1 tablespoon of flour
1cup of whipping cream
A quarter of a cup of sugar
1. Bring the water, rice, raisins, and cinnamon to the boil and then simmer until the rice is tender (about 20 minutes).
2. Whisk the flour into the cream and add it to the rice, raisin and cinnamon mixture.
3. Bring back to the boil and simmer for a couple of minutes until thickened.
4. Stir in the sugar, add a few grains salt and serve.
